Cut the innerfillets into 1 cm slices, flour lightly and add to a hot pan with a little extra-virgin olive oil in it. After about 2 minutes, turn the slices and add a half-cup of white wine. Salt and pepper the meat; the flour and wine will have made a tasty sauce. Serve with blanched green beans sautéed in a pan with oil, a fresh green onion, and a few basil leaves.
