CHICKEN FILLETS WITH LEMON AND THYME SAUCE

Ingredients
- 4 AIA Sliced Chicken Breast Fillets
- 2 Untreated lemons
- 1 Tsp. of corn starch
- Extra-virgin olive oil as required
- Thyme to taste
- Salt to taste
- Pepper to taste
Season the chicken fillets with salt and pepper and cook in a hot pan brushed with oil. Squeeze the juice from the lemons and dilute with half a glass of water, add the starch and mix.
Remove the fillets from the pan, pour the lemon juice over them and cook for 1 minute over a low heat until the sauce thickens. Season with salt, pepper, grated lemon rind and thyme.
Serve the fillets hot with the lemon sauce, along with a fresh seasonal salad.
