FOCACCIA WITH KEB’S, FRIED AUBERGINES, CUCUMBER AND HUMMUS
A very speedy and tasty recipe: focaccia with kebab and vegetables, served with a flavour-packed sauce.

Ingredients
- 400 g AIA Keb’s 100% chicken kebab
- 4 slices of salted focaccia
- 250 g boiled chickpeas
- 1 aubergine
- 1 cucumber
- 150 g cherry tomatoes
- 1 clove of garlic
- Juice of ½ a lemon
- Extra-virgin olive oil
- Oil for frying
- Salt and pepper to taste
Blend the chickpeas with the garlic, lemon juice and two tbsp. of oil. Add salt and pepper to the purée.
Cut the aubergine into cubes and fry it in boiling oil. Drain on kitchen paper and season with salt.
Slice the cucumber and the cherry tomatoes. Spread the hummus on the focaccia, along with the fried aubergines and cucumber.
Add the meat after heating it in the pan for 2 minutes, then add the cherry tomatoes. Top with a few leaves of fresh basil.
