The mouth-watering recipe for chicken wraps

  • 400 g AIA Chicken Breast
  • 4 piadinas
  • 1 red bell pepper
  • 4 lettuce leaves
  • 200 g button mushrooms
  • 1 garlic clove
  • 1 sprig of rosemary
  • Yogurt sauce
  • Extra virgin olive oil
  • Salt
  • Pepper

Even flavour follows fashion and at the moment chicken wraps are all the rage. A chicken wrap is merely a piadina used in the same way as a roll, filled with chicken and veggies, and of course accompanied with some irresistibly delicious sauces.  

Chicken wraps make a welcome change to the usual sandwich and are ideal for office lunches, aperitif nibbles or a picnic on the beach. With your chicken wraps in the picnic basket, a trip out of doors will be even more fun!

To make a chicken wrap, start by washing and trimming the bell pepper, eliminate the white inner ribs and seeds and then cut it into strips. Pour a drop of oil into a large frying pan and toss the peppers, adding salt and pepper to taste. When the peppers are cooked, set them aside.

Using the same pan, gently fry the garlic clove and the rosemary in a little oil, before adding the mushrooms cut into slices and seasoned with salt and pepper. Now you can prepare the yogurt sauce following the instructions given here but, if you prefer, you may use mayonnaise or tuna sauce instead.  

Cut the chicken breast into strips and add it to the mushrooms, mixing well and, if necessary, add a ladleful of hot broth or water. Wash the lettuce and dry the leaves thoroughly. Heat the piadinas and fill them with the peppers, chicken, mushroom, lettuce and yogurt sauce. All you have to do now is wrap them up and serve!
