First of all, cut the AIA rabbit into small joints and cook them in a pan of salted water. In the meantime, peel the potatoes, cut them into pieces and place them in the steamer basket over the pan where the rabbit is cooking. Cook for fifteen minutes.
Wash and trim the vegetables and herbs. Arrange the rabbit pieces and potatoes in an oven tray, together with the sliced onion, garlic cloves, chopped tomatoes, the pepper previously cut into strips and the herbs. Now add a drizzle of EVO oil and salt. Cook in an oven pre-heated to 200°C for roughly half an hour. Your oven-cooked rabbit with potatoes and peppers is ready to serve!
