So, here is the easy recipe for stuffed courgettes!
After washing the courgettes, cut off the top which will serve as a sort of lid. Cut around the inside perimeter of the courgette with a knife and draw a cross in the flesh to facilitate the next step. Use a spoon to scoop out the flesh taking care to leave a thickness of about 1 centimetre. Season with a pinch of salt. Now prepare the filling: put the minced meat, sausage, parmesan cheese, minced courgette flesh, beaten egg, breadcrumbs and parsley in a bowl.
Add a pinch of salt and pepper and mix thoroughly to obtain a smooth and evenly distributed filling. Pour a drizzle of oil onto an oven tray, fill each courgette with the mixture you have prepared and arrange them on the tray, before covering each one with its lid. Cook the courgettes in an oven pre-heated to 160° C for about 60 minutes and serve while still hot!
