TURKEY THIGHS WITH TWO TYPES OF MUSTARD

- 4 AIA Turkey Thighs
- 500 g Thick red and yellow peppers
- 3 dl Chicken stock
- 8 Small shallots
- 100 g Spring onion
- Green celery
- 1 Clove of garlic
- 50 g Mustard paste
- 30 g Whole-grain mustard
- Extra-virgin olive oil
- A few leaves of thyme
- 4 Laurel leaves
- Salt
Cut the celery up into pieces and stew it in a pan along with the spring onion, garlic clove and herbs.
Add the peppers, cut into strips, along with a little stock. Cover and cook until the peppers are soft yet a little crisp around the edges.
In another pan, brown the AIA turkey thighs in a little oil. Brush the surface of the browned thighs with the mustard paste, add the stock and cook for about 30 minutes (with the lid on).
Add salt to taste, along with a few grains of mustard. Serve the thighs with the peppers, adding a few chopped celery leaves at the last minute. Decorate with 2 sprigs of thyme and the laurel leaves.
