CRUNCHY CHICKEN BITES WITH SPICY COCKTAIL SAUCE

Ingredients
- 2 packs of AIA Chicken Fillet Nuggets
- Red wine vinegar to taste
- 2 cloves of garlic
- A few basil leaves
- 1 carrot
- 1 onion
- 6 tbsp. extra-virgin olive oil
- Chilli powder to taste
- ½ red pepper
- 8 ripe tomatoes
- 1 stick of celery
- 1 tsp. sugar
Wash and blanch the tomatoes, remove the skin and seeds and cut into cubes.
Chop the herbs, garlic, carrot, celery and pepper and soften with 4 tbsp. of oil over a low heat along with the chilli powder until golden brown. Add the tomatoes, vinegar, sugar and salt. Cook over a low heat until the sauce thickens.
Place the sauce in a blender, then mix well with two tbsp. of boil, adding salt if necessary. Leave to rest before serving.
In the meantime, heat the chicken bites in the oven at 200°. After 10 minutes, remove the chicken from the oven and serve hot with the spicy sauce.
To decorate, arrange the chicken pieces on some spinach leaves.
