  • 4 AIA Turkey Drumsticks
  • 80 g Chicory honey
  • 1 Unpeeled clove of garlic
  • 120 g Carrots
  • 120 g Potatoes
  • 50 g Butter
  • 5 g Stock
  • 1 Sprig of rosemary
  • 50 g Butter
  • Table salt to taste
  • Coarse salt to taste
  • Pepper to taste

Brown the turkey drumsticks in the pan with the oil, sprig of rosemary and garlic, along with some butter. Continue to cook over a very low heat, adding the stock cube and pouring the cooking juices over the turkey every 4 minutes. When cooked (after about 45 minutes), glaze with the honey and place in the oven for a few minutes to caramelise the surface, using the top element of the oven only for best results.

Boil the potatoes and the carrots in salted water to obtain two types of purée. Place the drumsticks on a plate with the potato and carrot purées next to one another beside it. For an extra idea: complete with a sprig of rosemary and a few grains of coarse salt.
