- 4 AIA Turkey Drumsticks
- 80 g Onions
- 80 g Celery
- 150 g Small green tomatoes
- 100 g Green chilli peppers
- 80 g Fresh long, red peppers (not spicy)
- Small spicy peppers to taste
- 50 g Toasted sesame seeds
- 50 g Toasted, salted peanuts
- 40 g Bitter cocoa
- 50g di arachidi sotto sale tostate
- Peanut oil
- 50 g Cocoa meal
- 30 g Almonds
- Black pepper to taste
- Cinnamon to taste
- 4 Cloves
- Fresh ginger to taste
- 0.3 Litre vegetable stock
- Red wine
In a pan of medium height, brown the drumsticks in the oil with the onion and celery. Add the wine, leave to evaporate. Chop all the other ingredients roughly in the mixer and add them to the pan.
Add the stock and stew for about an hour, adding a little stock from time to time if necessary. Place the drumsticks on a country-style dish and pour over the sauce.
